Vegan lemon and blueberry cheesecake

Makes 2 in small ramekins

Adjust quantities to suit taste

4 Digestive biscuits

2 tbsp Biscoff spread

3 tbsp Plant-based soft cheeze

1 tbsp Soya cream

2 tsp Icing sugar

Lemon essence

1 tbsp Blueberry preserve

Fresh blueberries

1. Crush the biscuits and mix in Biscoff spread to make the base.

2. Mix soft cheeze with soya cream, icing sugar and lemon essence until smooth.

3. Mix blueberry preserve with fresh blueberries.

Layer 1, 2 and 3 in ramekins.

Top with fresh blueberries.

Chill in fridge for a couple of hours.

Poor little puppy

Poor little puppy,
we’ll get you fixed yet.
We’ll just take a quick
little trip to the vet.
She’ll treat you so gently
and feed you some yum,
and when you’re not looking
she’ll check out your bum.

and you’re doing okay.
just squirming a bit,
but you haven’t run away.
All done and you’re fine,
even though you look shocked.
She then checks your tummy
and says you need walked,
or fed a bit less,
’cause you’re overweight.
But you’re hours in the forest,
so guess that’s no steak!
She gives us some stuff
to squirt down your throat
to bind you up firmly
and keep clean your coat.
You’ll soon feel much better,
and ready to play,
but you’ll probably be hungry
for a couple of days.

Mother of the Bride

“Are you free on this date, Mum?”
She sprung it on me thus.
“Save the date!” She texted me.
“But please don’t make a fuss.”

I’m going to be a mum-in-law,
much sooner than I thought.
The big day is three months away,
and my dress is far too taut.

I’ll have to start my diet now
and stop eating big meals.
A shame; I’ve grown quite fond of them.
More salad, now, I feels.

It didn’t even cross my mind,
not even a little, “maybe”
Do you think that I should ask…
“Are you going to have a baby?”?

I’m sure she’s not, for they just got
a gorgeous little pup.
I wonder if they’ve mentioned her
in their legal pre-nup.

Perhaps I’m thinking far too much
about their biggest day.
I’ll just relax until it’s time
to give my girl away.

“No mayonnaise, thank you.”

Although ‘for’ and ‘two’ are, together, the answer 2 …
I said, “Don’t get me started,”
which, in fact, is incorrect, as I actually said,
“Let’s not get started…”
but let’s not get pedantic either.

Tea for two.
Black and white
on white with black.
No sugar, please;
I’m trying to lose some weight.
Although, the tea leaves say,
I should try a slice of
magnificent pie…
or two.

Close your eyes – A short story

Every morning, I am compelled by his power.

“Close your eyes”, he says in a tone all his own.

I disrobe and stand naked before him, trembling as the cold air caresses my flesh.

He counts down; three… two… one. Anticipation builds within for what is to come. I know there are others, but right now he focuses only on my body. I stand as still as I can as he scans for the slightest of movements.

After what seems like an eternity, he whispers, “open your eyes”.

Peering through still sleepy lashes, I obey and gaze at him intensely.

“Your balance is almost perfect.”

The corners of my mouth curl into a wry smile, yet still I wait expectantly. Within seconds, the moment arrives… a weight is lifted as I hear the fanfare.

Enveloping myself in the warmth of my robe, I put the Wii Fit balance board away until tomorrow.
